Wyewood 2020 St Bubba Feast Menu and Ingredients


Appetizer/Preset Course:  England

Various Crudite and marinated vegetables

Yrchouns (Hedgehogs): Pork, chicken, ginger, salt, cinnamon, cloves, currants, almonds (or hazelnuts)
Frytour of Erbes: Chives, marjoram, assorted salad greens, parsley, thyme, oregano, rosemary, wheat flour, salt, yeast, canola oil
Chyches (Chickpeas): Chickpeas, olive oil, saffron, garlic, cloves, cardamom, cinnamon, salt, pepper
Smoked Olives:  Pitted olives, garlic, thyme, walnuts, sesame oil, applewood smoked

First Course:  Marseille

Stuffed Roast Pig: Pork, mozzarella, ricotta, chestnuts, pear, sugar, cinnamon, ginger, nutmeg, cloves, mace, salt
Leek and Hazelnut Sauce: Leeks, bacon, chicken Better than Bouillon, hazelnuts
Green Sauce:  Parsley, hazelnuts, cider vinegar, GF bread crumbs, honey, cinnamon, ginger, cloves, salt pepper
Tender Chickpeas:  Chickpeas, onions, olive oil, salt, parsley marjoram, basil, thyme, rosemary
Cheese Saucee:  Yogurt cheese, garlic, honey, salt
Turnips:  Turnips, Better than Bullion Vegetable
Stewed Cress:  Chard, watercress, olive oil, butter, grated cheese

Second Course:  Italy

Sole with Pink Garlic Sauce:  Sole, cherries, hazelnuts, garlic, GF breadcrumbs
Crustless Sienese Tart:  Cinnamon, sugar, eggs, milk, cream cheese, rose water, GF bread crumbs
Sauteed Mushrooms with Spices: Mushrooms, leek, pepper, ginger, nutmeg, coriander, vegetable broth
Pasta with Butter and Pecorino Romano:  Pasta, butter, sheep milk cheese, (There will be GF pasta available)

Third Course: Cyprus

Frankish Style Roast Lamb: Sesame oil, rose water, salt.
Isfanakh  Mutajjan - Fried Spinach: Spinach, cold pressed sesame oil garlic, salt, cumin, coriander seeds, cinnamon.
Carrots and Leeks with Tahini Sauce:  Carrots, leeks, Tahini, wine vinegar, honey, seasonings TBD.
Puree of Eggplant with Yogurt. Eggplant, onion, sesame oil and olive oil, garlic, yogurt of goat milk or kefir, parsley.
Flatbread of Spelt:  Spelt flour simple flatbread

Fourth Course: Acre en Route to Jerusalem

Qataif (Baklava - ish): Phyllo, butter, pistachios, hazelnuts, sugar syrup, honey orange water
Honeyed Rice with Stewed Figs:  Rice, milk, honey, butter, cinnamon, figs, wine, cinnamon, cloves, sugar, lemon and orange rind
Mint and Melon Salad with Candied Nuts: Honeydew melons, sugar, mint, orange water, pistachios, walnuts
